Savory soy-free tofu patties with mushrooms, sweet pepper, onion and fragrant za’atar.
Ingredients
- 1 block soy-free tofu, drained and crumbled
- 1 cup mushrooms, diced
- ¼ cup sweet red pepper, diced and deseeded
- 1 cup sweet or white onion, diced
- 2–3 tbsp za’atar seasoning
- ⅓ cup coconut aminos, plus more as needed
- 1 cup gluten-free flour, plus more as needed
- Salt, to taste
Instructions
- Optionally grill or sauté mushrooms and sweet pepper first for deeper flavor.
- Combine crumbled tofu, mushrooms, pepper and raw diced onion in a bowl.
- Add za’atar, coconut aminos and salt to taste.
- Mix in gluten-free flour until mixture holds together when pressed; add more gradually if needed.
- Shape patties; chill briefly if possible.
- Cook in a lightly oiled skillet or cast-iron grill pan until browned on both sides. Optionally finish in a 350°F oven for 3–5 minutes.
Chef’s Notes
- Pre-cooking the mushrooms and peppers adds a delicious grilled flavor.
- If the mixture is too wet to shape, add gluten-free flour gradually rather than all at once.
- A short rest in the fridge helps the patties hold together.
